Spaghetti without the spaghetti

So my intentions last night were to make old fashion spaghetti- ground turkey, celery, onion, green/red bell peppers and spaghetti noodles…but when I went to reach for the noodles, there were none. OOPS! Lol

Instead of thinking of something else to make, I went ahead with the ground turkey and veggies with some organic tomato basil sauce and instead of the noodles, I used one of my favorites (if you didn’t already know and saw in other photos) the quinoa/brown rice pouches. I used 1 1/2 pouches in the meat/veggies/sauce and it tasted GREAT!!

It reminded me of the meal my mom occasionally makes, DIRTY RICE (but without the sauce).

Since I have leftovers, I’m having some for lunch….
