I have featured another Energy protein bite a while back, but was introduced by one of my staff with another variation/flavor to try.
I gave it a try despite one of the ingredients that my pallet has a hard time with (coconut), but I ended up really liking it and wanted to share with you!
The addition that was added to this Energy bite, not listed in the ingredients was BANANAS (2 bananas per batch).
Otherwise, if you are not much of a banana fan, exclude it!
- 1 CUP of DRY oatmeal
- 2/3 cup coconut flakes
- ½ cup of peanut butter
- ½ cup of ground flaxseed
- ½ cup of chocolate chips or cocoa
- 1/3 cup of honey
- 1 Tbsp. of Chia seeds
- 1 tsp. of Vanilla extract
Mix all ingredients together and let set in fridge for about ½ hour. Roll into small balls about 1 inch in size. Store in air tight container, back in the fridge.
