SOOOOO…I was in the mood for some Curry chicken for dinner (well, at least my version of curry chkn). Anywho, as I went through to make sure I had all the ingredients for the meal, I realized I did not have any diced tomatoes, so I used my creative juices and ended up using tomato paste. It turned out WONDERFUL, obviously a lot thicker, but definitely a nice consistency and I actually liked the meal more than if I had used regular diced tomatoes!
I did not want to go without having some green in my meal, so I used fresh green beans (the ones you wash before cooking, & snap the ends off). With it all, it actually made a delicious meal!
Ingredients;
White long grain rice (I use sparingly, but I switch brown and white from time to time)
celery
onion
tomato paste (half a can)- can was small)
kosher salt
black pepper
minced garlic
curry powder
lean chicken breast (diced)
