Perfect light and fresh snack for the summertime that can be used solely as a snack or compliment as a side to a main dish.
Ingredients you will need:
- From 1 large steamed corn on the cobb, use the kernels OR use 1 steam bag of corn kernels
- 1 medium avocado, sliced
- 3 diced Persian cucumbers ~1.5 cups
- 1 cup of cherry tomatoes sliced in half
- 2 tablespoons of red onion, sliced
- 2 teaspoons of Extra Virgin Olive Oil (EVO)
- 1 medium lemon ~2 tablespoons of fresh lemon juice
- 1/4 teaspoon kosher salt
- fresh black pepper to taste
